Egg & Bacon Omelette
Ingredients:
2 eggs
2 rashers of bacon, chopped
Diced fresh tomatoes (optional)
A splash of milk or water
A little butter or oil

Instructions:
Fry the chopped bacon in a non-stick pan until crispy. Remove from the pan and set aside, leaving the bacon fat in the pan.
Whisk the eggs with milk or water, salt, and pepper in a bowl.
Heat the pan with the bacon fat (or add a little butter/oil) over medium heat.
Pour the egg mixture into the pan.
As the edges of the omelette set, gently push the cooked egg towards the centre, allowing the uncooked egg to flow underneath.
Sprinkle the cooked bacon (and cheese/chives if using) over one half of the omelette.
Fold the omelette in half.
Cook for another minute until the filling is heated through and the cheese (if using) is melted.
