Tuna Mayo Pitta Pockets:

  • Ingredients: 1 tin tuna (drained), 1 tbsp mayonnaise, ½ red onion (chopped), 1 wholemeal pitta bread, lettuce.

  • Instructions: Mix tuna, mayo, and onion. Stuff into pitta with lettuce.

Hummus and Carrot Wrap:

  • Ingredients: 1 wholemeal wrap, 2 tbsp hummus, 1 carrot (grated), handful of spinach.

  • Instructions: Spread hummus on wrap, top with carrot and spinach, roll up.

Cheese and Tomato Toastie:

  • Ingredients: 2 slices wholemeal bread, 2 slices cheddar cheese, 1 tomato (sliced).

  • Instructions: Layer cheese and tomato between bread. Butter outside and toast in a pan or toastie maker until golden and cheese is melted.

Avocado and Egg on Toast:

  • Quick Avocado Toast

    Ingredients:

    • 1-2 slices of bread (wholemeal or sourdough recommended)

    • ½ ripe avocado

    • Salt and pepper

    • Optional: squeeze of lemon or lime juice

    Instructions:

    1. Toast the bread to your liking.

    2. Mash the avocado in a small bowl with a fork.

    3. Season the mashed avocado with salt and pepper, and a squeeze of lemon or lime juice if you have it.

    4. Spread the seasoned avocado evenly onto the toasted bread.

    5. Serve immediately and enjoy!

    Optional Extras (Easy to find in Leeds):

    • Chilli flakes: For a bit of heat.

    • A drizzle of olive oil.

    • A sprinkle of sesame seeds.

    • A fried egg on top.

    Enjoy your quick and healthy avocado toast! It's a great base for adding other toppings too.

Toasted Chicken Sandwich

Ingredients:

  • 2 slices of bread (wholemeal or white)

  • Leftover cooked chicken (sliced or shredded) - about 1/2 cup

  • 1 tablespoon mayonnaise (or salad cream)

  • Optional: lettuce, tomato slices

  • A knob of butter or a little oil

Instructions:

  1. Spread mayonnaise on one slice of bread.

  2. Layer the cooked chicken evenly on top of the mayonnaise.

  3. Add lettuce and tomato slices if using.

  4. Top with the other slice of bread.

  5. Spread butter or a little oil on the outside of both slices of the sandwich.

  6. Heat a frying pan over medium heat.

  7. Place the sandwich in the pan and toast for 2-3 minutes per side, or until the bread is golden brown and the inside is heated through.

  8. Slice in half and serve immediately.

Tips for Extra Flavour:

  • Mix a little Dijon mustard or a pinch of black pepper into the mayonnaise.

  • Use leftover roast chicken for a richer flavour.

Slightly More Involved (Around 15-20 minutes):

  1. Speedy Vegetable Stir-fry: Stir-fry some pre-chopped vegetables (peppers, onions, courgette, frozen peas) in a pan with a little soy sauce and ginger (powdered is fine). Serve as is or with some quick-cooking noodles.

  2. Halloumi and Veggie Wraps: Grill or pan-fry slices of halloumi. Wrap in a wholemeal tortilla with some hummus, grated carrots, spinach, and sliced cucumber.

  3. Quick Chicken Noodle Soup: Use a good quality chicken stock (from a cube is fine). Add some cooked chicken (leftovers are perfect), chopped vegetables (carrots, celery, frozen peas), and some egg noodles. Simmer until noodles are cooked.

  4. Simple Frittata: Whisk eggs with a splash of milk, salt, and pepper. Stir in some chopped vegetables (spinach, mushrooms) and cheese. Cook in an oven-safe pan on the stovetop until the edges are set, then finish under a hot grill until the top is set.

  5. Lentil Soup with Bread: Use a tin of good quality lentil soup. Heat it up and serve with a warm wholemeal roll.
